What is Uttapam?

Uttapams are a savory pancake popular in South India. The batter is made from fermented white rice and a variety of lentils including urad dal, channel dal, and thick poha. The legumes and grains soak until soft and are then blended into a fine batter with water. It is left to sit until just fermented. The Uttapams are cooked on a griddle or pan until lightly golden. Often vegetables or meat are cooked into the top of the uttapam. The flavor is tangy, mild and salty and the texture is light yet dense. Uttapams are served hot with chutney.
