Suckling Pig (Lechon de leche) is a Filipino favorite that consists of a whole young pig, typically about 12 to 14 pounds in weight. We use a combi oven to mimic the same fluctuating temperature you get from a pit to achieve that crispy and golden brown skin while the meat inside remains tender and juicy. Before roasting, the piglet is seasoned with various spices and herbs, such as garlic, lemongrass, and bay leaves. Lechon de leche is often served at special occasions and celebrations such as weddings, birthdays, and fiestas, and it is considered a centerpiece dish in Filipino cuisine.
