What is Cannoli Shells?

Cannoli shells are used in making the Sicilian dessert called cannoli. These shells are made from a sweet dough flavored with marsala wine and cinnamon. Depending on the recipe, other flavors may be added in addition to these two. The dough is rolled very thinly and wrapped around a thin cylinder to create a tube. The dough and tube are then deep fried in oil and once cooked, the now tube shaped dough is removed from the cylinder creating a crunchy, lightly browned, sweet tube, which will then be filled with cannoli cream.
