What is Kishke?

Kishke, also known as stuffed derma is a Jewish dish made two different ways. One uses animal intestines as a sausage casing. This is a common casing for meat. The other does not use any casing. Kishke is made from beef fat, flour, and seasonings and is sliced into serving-sized pieces. The flavor is salty and savory and the texture is soft with a medium-textured body.
