What is Shaoxing Wine?

Shaoxing wine is Chinese rice wine used for cooking, as well as drinking. Shaoxing wine is made from fermented glutinous rice and is usually aged for 10 or more years. The ABV is 17 to 18% and has a flavor that is reminiscent of dry sherry. Though the flavor can vary, shaoxing wine is usually sweet and has a color that is clear or brown.
