Pork belly comes from a cut of meat along the belly of the pig. It is the fattiest cut of meat and is the same cut used in bacon; however, pork belly is cut as a slab, rather than a thin slice. The pork belly is a white cream color with pink streaks. The white is the fat and the pink is the meat. When cooked the flavor is similar to pork loin, but richer, more complex and flavorful. The fatty outer layer can make a nicely crisped exterior. Cooked pork belly is white and is used often in East Asian dishes and some hispanic cuisine.
