What is Kombu Seaweed?

Kombu is a type of kelp and is popular in East Asia. Kombu is a multi use ingredient and is used to flavor broths, or added to dishes as a sea vegetable. It is also added to the cooking process of beans to make them more digestible. Kombu is dark green and often comes in dried strips that look a bit like misshapen lasagna noodles. When kombu is rehydrated and soft, it has a smooth and wet texture that is thin and very similar to other seaweeds, but with a greater density. The flavor is mild, not fishy and tastes somewhat like a mushroom.

What does Kombu Seaweed Taste Like?
