What is Kampyo?

Kampyo is used in Japanese cooking and is dried shavings from the large green calabash gourd. Kampyo must be rehydrated before eating and boiling is an easy to way to do this. They have a brown color and come in long thin strips. The texture is spongy, chewy and yet slightly crunchy. The flavor is bland with a bit of sweetness and is often flavored with dashi, sugar, rice wine and soy sauce.
