What is Huitlacoche?
Huitlacoche, corn smut or Mexican truffle, is an edible fungus that grows on corn kernels. It is considered a delicacy in Mexican cuisine and has a unique flavor profile often described as earthy, savory, and slightly sweet.
Huitlacoche forms when a specific fungus, Ustilago maydis, infects the ears of corn. The fungus penetrates the corn kernels, causing them to swell and turn into dark, greyish-black masses. Although it is a fungal infection, huitlacoche is highly valued for its culinary properties.
In Mexican cuisine, huitlacoche is an ingredient in various dishes, including soups, stews, quesadillas, tamales, and sauces. It is often sautéed with onions, garlic, and other seasonings to enhance its flavor.
